Grown in the central mountains at 600–1,450m and processed washed, it balances cacao, nuts, citrus and milk chocolate.Many of its high-grown lots earn specialty grade — a Caribbean origin of real substance.
Cibao names the valley country of the north, Barahona the mountains of the southwest — both major producing zones under the influence of the Cordillera Central. A capable origin whose lots above 1,000m earn specialty grades, it balances cacao and nuts with the mellowness the Caribbean is known for.
Among the Caribbean’s three great producers (Jamaica, Cuba, the Dominican Republic): if Jamaica’s Blue Mountain is delicacy at a price apart, and Cuba’s Sierra Maestra is full-bodied gravity, the Dominican’s appeal is balance and availability.
