How to read this roaster
Fuglen Tokyo brought the Oslo-born Nordic coffee bar to Japan. Opening in Sangubashi, Tokyo in 2012, it played the historic role of introducing Nordic coffee culture — light roasts, fruit-forward, delicate and clean extraction — to this country.
The Nordic light-roast culture
The Nordics — Norway, Sweden, Denmark, Finland — are among the heaviest coffee-drinking regions on earth and developed their own light-roast culture. In contrast to Japan’s traditional dark roasts, Fuglen planted that material-first light-roast direction in the Tokyo neighborhood of Sangubashi.
Beans from the Oslo roastery
The beans are roasted by Fuglen Coffee Roasters in Oslo, so Nordic-standard light roasts arrive in Japan direct. The focus is origins that shine at light roasts: Ethiopia, Kenya, Colombia, Rwanda.
Café by day, bar by night
Fuglen is also known for its unusual format — coffee shop by day, cocktail bar by night. True to a name that means "the bird" in Norwegian, the free, inventive sense of space can be experienced at the Sangubashi and Asakusa locations.
Recommended brewing
Paper drip on the hot side, 93–95°C, about 3 minutes. Nordic style is designed to draw acidity out without fear — resist the Japanese instinct to lower the temperature to soften acid, and brew the recipe as written.
