How to read this roaster
Glitch Coffee & Roasters, based in Jimbocho, Tokyo, is a specialty roaster committed all the way to ultra-light roasting. Since opening in 2015 it has proposed "enjoying coffee like wine," deliberately selecting beans whose character stands at extremes — Gesha varieties, naturals, rare lots — through the combination of origin, variety and process.
The aesthetics of the ultra-light roast
Glitch roasts lighter than the industry’s light — sitting between High and City. The approach minimizes "making flavor with the roast" and maximizes what the green bean itself carries. The result is an experience of listening to the material: tea-like complexity in Ethiopian naturals, jasmine and bergamot in Panama Gesha, Kenya’s ferocious blackcurrant.
A trove of Gesha and rare lots
Glitch has consistently brought contested top lots from Best of Panama and rare Ethiopian natural and anaerobic lots onto its menu. Being able to drink beans worth over ¥1,500 a cup as a matter of routine, at a shop in central Tokyo, is one of the high-water marks of Japanese coffee culture.
Treating coffee the way wine is treated
Cards in the shop introduce each bean by variety, process and terroir, so you approach the menu like a wine lover choosing a bottle. Pricing is deliberately wide as well, from daily lots to expensive auction lots, structured so you can pick "the cup for where you are now."
Recommended brewing
For ultra-light roasts the rule of thumb is hand drip with slightly hotter water (93–95°C) and a longer brew (~3 minutes). Gesha-type lots also perform beautifully on AeroPress — trying several methods at home shows the same bean twice over.
