Alishan is famed for high-mountain oolong tea, and that tea-garden culture carries into coffee. Careful hand-picking and processing and a cool high-mountain climate create a tea-like delicate sweetness. Output is tiny, making it a rare premium.
To highlight its tea-like delicate sweetness, brew clean at a light-to-medium roast. Honey-processed lots offer an even sweeter, more vivid aroma.
