How to read this roaster
Mi Cafeto is the premium-line specialty roaster led by José Yoshiaki Kawashima, the "Coffee Hunter." Specializing in bringing Jamaica Blue Mountain, Hawaii Kona, and lots from rare varieties and farms into Japan, it has held its place for over 15 years as a name you cannot leave out when rare coffees are discussed.
The Coffee Hunter’s eye
During his years at UCC, Kawashima walked coffee lands in more than 60 countries, working on quality improvement at origin. After founding Mi Cafeto he built his own "Grand Cru Café" ranking system, establishing a style of carrying only lots evaluated across multiple criteria — farm, altitude, variety, harvest year.
Blue Mountain, Hawaii, Gesha
Mi Cafeto is one of the few shops able to carry the rare names — Jamaica Blue Mountain, Hawaii Kona, Ethiopian and Panamanian Gesha — with any stability. These coffees circulate in small volumes with wide quality variance, but long relationships and a practiced eye let Mi Cafeto secure high-grade lots continuously.

Recommended brewing
For mild types like Blue Mountain and Kona, the traditional way in is nel drip at a low 88–90°C, drawn slowly. For Gesha: V60 at 93–94°C, with a full 40-second bloom so none of the florals escape.
