In Doi Chang, coffee growing is carried by the Akha and other highland communities — a leading example of fair trade and origin branding done well. Known through the Doi Chaang Coffee Company and its unusual model in which producers own part of the brand rights, it showed the world the potential of Thai specialty.
Doi Chang works across washed, natural and honey processing (plus experimental ferments such as yeast inoculation and anaerobic), so the same fields produce lots of many expressions. Over a base profile of floral sweetness and citrus brightness, each process adds its own accent — a pleasure to explore.
