How to read this roaster
%Arabica is the Kyoto-born specialty brand now operating in more than 20 countries. Founder Kenneth Shoji owns a farm in Kona, Hawaii, and runs a vertically integrated model managing quality from the farm to the single cup. The Higashiyama shop’s modern design dissolved into the Gion streetscape spread worldwide on social media, making the brand familiar to visitors from abroad.
From Kyoto to the world
The Higashiyama and Arashiyama shops have become fixtures of the Kyoto itinerary. Melting a minimal, latte-art-beautiful store design into Kyoto’s townscape is a model case of redefining coffee as a lifestyle brand.
Shops in 20+ countries
Hong Kong, Dubai, London, Paris, Shanghai, Singapore — %Arabica operates in more than 20 countries. Few Japanese-born coffee brands carry this scale of recognition abroad; it is the emblem of Japanese specialty as an export.
The estate in Kona, Hawaii
Owning a farm in Kona makes %Arabica one of the few brands that can carry rare Kona coffee with stability. Kona grows on volcanic high ground on the west side of Hawaii’s Big Island, and the brand’s structure lets shops worldwide serve that quality.
Recommended brewing
Espresso and lattes are the signature. At home, a moka pot plus a milk frother gets you close without an espresso machine. For hand drip: V60, 92°C, 1:16.
