Overview

Yirgacheffe sits in the Gedeo Zone of southern Ethiopia, a highland coffee region within greater Sidamo.

A cool climate at 1,700–2,200m and the diversity of native varieties (Ethiopian heirloom) produce its signature: a jasmine-like floral lift with bright acidity recalling lemon and bergamot.Washed lots drink tea-like and delicate; naturals foreground berry and stone-fruit sweetness.Most of the coffee is grown by smallholders and processed at washing stations and cooperatives.

About this region

i.Why Yirgacheffe is special

Even within Ethiopia, the birthplace of coffee, Yirgacheffe has long stood worldwide as the byword for washed specialty. High altitude with wide day–night temperature swings, a wealth of native varieties, and careful processing at washing stations combine into a cup that exists nowhere else: light as black tea, yet radiating floral aromatics.

ii.Terroir

The mountains of the Gedeo Zone rise to 1,700–2,200m, blessed with fertile volcanic soil and well-judged shade trees. At this altitude the cherries ripen slowly, banking sugar and layered acidity. Most plots are tiny, garden-like holdings where several native varieties grow intermingled — one more source of the region’s diversity of flavor.

iii.How processing changes the cup

Washed lots are clean and tea-like, with bright acidity and delicate aromatics of jasmine, bergamot and lemon standing forward.

Naturals, dried whole in the cherry, add strawberry- and blueberry-like fruit with rounded sweetness and body. That the same region shows two entirely different faces by process is one of Yirgacheffe’s great pleasures.

iv.Choosing and enjoying it

To honor the delicate aromatics, light to medium roasts are recommended. For brewing it pairs best with clean-finishing methods — paper drip or AeroPress. When buying, check the process label (washed / natural) and the crop year, and you will find your way to the profile you prefer much faster.
